Cafe Rio Pork

Cafe Rio pork copycat recipe. Makes pork for burritos, salads, or bowls.

Ingredients

Cumin 1 Tbsp
Paprika 1 Tbsp
Onion powder 1 Tbsp
Chili powder 1 Tbsp
Garlic powder 1 Tbsp
Salt 2 tsp
Pepper ½ tsp
Boneless sirloin pork roast or pork shoulder roast 3-5 lbs
Root beer or coke 1 cup
Green enchilada sauce or salsa, divided 2 cups
Brown sugar ½ cup
Chopped green chili peppers 8 oz
Red enchilada sauce 2 cups

Instructions


  1. Mix spices together, setting aside 2 tablespoons for sauce later.
  2. Cut pork into 3-6 big chunks and coat with spice mixture.
  3. Put soda and 1 cup green enchilada sauce in slow cooker. Stir to combine. Add chunks of seasoned pork.
  4. Cook in slow cooker on low for 8-9 hours or high for 5-6 hours.
  5. Transfer pork to cutting board and shred.
  6. Discard all but ½ cup of cooking liquid in the slow cooker.
  7. To slow cooker, add 2 tbsp spice mixture, red enchilada sauce, brown sugar, green chiles and 1 cup green salsa. Stir to combine and add in shredded pork.
  8. Cover and cook on high for 15-20 mins or until heated through. Keep warm until serving.
  1. Add soda, green enchilada sauce, and seasoned pork chunks to instapot.
  2. Cook on high pressure for 55-60 minutes.
  3. Discard all but ½ cup of cooking liquid and shred pork.
  4. Add 2 tbsp of spice mixture, red enchilada sauce, green enchilada sauce, brown sugar and green chiles to pot.
  5. Heat through using saute function or slow cooker function on high for 30 mins.

Tip

Can be made with chicken or beef but cooking times will vary.
