Chicken Tikka Masala

Ingredients


Chicken Marinade

Boneless chicken 1 ½ lbs
Greek yogurt ½ cup
Kashmiri red chili powder 1 tsp
Garam masala 1 tsp
Tumeric ¼ tsp
Coriander powder 1 tsp
Cumin powder ½ tsp
Salt ½ tsp
Lemon juice 1 Tbsp
Kasuri methi 1 Tbsp
Ginger garlic paste 1 Tbsp
Oil (mustard oil if available) 1 Tbsp

Tikka Masala Sauce

Ingredient Amount Unit
Oil (or ghee) 3 Tbsp
Onion 1 large onion
Green chilli (optional) 1
Salt 1 tsp
Ginger garlic paste 1 Tbsp
Kashmiri red chili powder 1 tsp
Garam masala 2 tsps
Coriander powder 1 Tbsp
Cumin powder 1 and ½ tsps
Sugar 1 to 2 tsps
Peeled tomatoes 1 14 oz can
Hot water 1 cup
Kasuri methi 1 Tbsp
Heavy cream ½ cup

Instructions


Chicken Marinade

  1. Cube chicken to 1 to 1 and ½ inch pieces. Add them to a mixing bowl. Make sure there is no excess moisture in your chicken. Pat dry with paper towel if needed.
  2. Add to bowl:
    • red chili powder
    • garam masala
    • cumin powder
    • coriander powder
    • tumeric
    • salt
    • lemon juice
    • oil
    • ginger garlic paste
    • yogurt
    • kasuri methi
  3. Mix well. Cover with cling wrap and refrigerate for minimum of 8 hours and up to 48 hours.

Make Tikka Sauce

  1. Heat oil or ghee in a pot or pan. Add onions and sprinkle 1 teaspoon salt. Saute until deep golden, 10 to 12 minutes.
  2. Add ginger garlic paste and green chilli. Saute until aromatic, for 40 to 60 seconds.
  3. Reduce the heat to low. Add spices stir well quickly.
    • red chili powder
    • coriander powder
    • garam masala
    • cumin powder
  4. Add the tomatoes and cook on a medium high heat until the tomato masala becomes really thick.
  5. Pour hot water and mix well. Bring to a rolling boil and cover. Simmer until thick, about 12 to 14 minutes.
  6. Cool down and blend to a smooth puree. Return it to the pot and heat up.

Make the Chicken Tikka Masala

  1. Grill chicken, smoke, oven bake or cook in skillet until cooked through and slightly charred.
  2. After 12 to 14 minutes of simmering the tikka masala sauce, add sugar and the cream. Stir well and cook for a few minutes untill thick, creamy and aromatic.
  3. Add chopped grilled chicken and kasuri methi. Mix together.
  4. Serve with basmati rice.
